
Ingredients
- 700g cream cheese
- 230g mascarpone
- 5 eggs + 1 egg yolk
- 1 tsp cooking salt
- 320g raw sugar
- 420g double cream
- 10g vanilla extract
- 60g plain flour
- butter for preparing cake tin
Method
Step 1: Turn on the oven to heat at 200ºC
Step 2: Butter a 7 inch spring-open cake tin, then add cut-to-size parchment paper to the bottom
Step 3: To a mixing bowl add the cream cheese & mascarpone & mix with an electric hand mixer or kitchen aid on low speed until combined
Step 4: Next add the sugar in a little at a time, mixing until it is completely combined with the wet mixture
Step 5: Increase the speed to medium & beat in one egg at a time, finishing with the remaining yolk, followed by the salt, vanilla & cream
Step 6: Finally add the flour, mix thoroughly before pouring the batter into the prepared cake tin
Step 7: Cook for 60 minutes before cooking to room temperature
Step 8: Serve room temperature with strawberry coolie
